Often, I drink coffee when I’m lounging or relaxing. Also, there are times and places when I use coffee as a pick-me-up and get-me-going type of drink. In France I learned that drinking coffee in crowded streets and station halls is less convenient than eating it. After being bumped, jostled, and "excusez-moi"-ed enough times to spill more of my java jolt over my shoes than I could drink, I mumbled there must be a better way.

COffee-infused breakfast burrito

 🌯 Caffeine Boost Coffee-Infused Breakfast Burritos 🌯

Ingredients:

  • 4 large flour tortillas
  • 6 large eggs, scrambled
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup shredded cheddar cheese
  • 1 avocado, sliced
  • 1 shot of espresso (cooled)
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions:

  1. In a skillet, scramble the eggs over medium heat until just set.
  2. In a small bowl, whisk together the cooled shot of espresso with a pinch of salt and pepper.
  3. Warm the tortillas in the skillet or microwave.
  4. Assemble the burritos by placing a portion of scrambled eggs, black beans, avocado slices, and shredded cheese in the center of each tortilla.
  5. Drizzle the espresso mixture over the fillings.
  6. Fold in the sides of the tortilla and roll it into a burrito.
  7. Garnish with fresh cilantro (coriander) and serve immediately.
