I took a quick jaunt to northern Europe during the broiling summer months in the south. I was in such a rush to get to cooler climates that I forgot to pack my usual granola bars and snacks. So, I felt embarrassed when I shouted in the airplane, “Oh darn! I forgot my nuts!” That won me a whole lot of side-eye from my fellow passengers. 😃 All I could think about was landing and getting a nice cup of Joe.

Java Jolts Coffee-Infused Energy Bars

 Ingredients:

  • 1 cup rolled oats
  • 1/2 cup almond butter
  • 1/3 cup honey
  • 1/4 cup ground flaxseed
  • 1/4 cup chia seeds
  • 1/4 cup chopped nuts (e.g., almonds, walnuts)
  • 1 shot of espresso (cooled)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions:

  1. In a large bowl, combine rolled oats, almond butter, honey, ground flaxseed, chia seeds, chopped nuts, and a pinch of salt.
  2. Add the cooled espresso and vanilla extract to the mixture. Stir until everything is well combined.
  3. Line a baking dish with parchment paper and press the mixture evenly into the dish.
  4. Refrigerate for at least 2 hours to allow the bars to set.
  5. Once set, cut into bars and store in the refrigerator for a quick and energizing snack.
